Lemon Cookies Recipe

This is a recipe for Lemon Crackle Cookies

Ingredients:

• 2 large eggs
• 1/3 cup vegetable oil
• 1 package lemon cake mix
• 1 lemons worth of zest
• 1/2 cup powdered sugar

1. Preheat oven to 375 degrees
2. Prepare 1 - 2 baking sheets, with parchment paper on them
3. Pour powdered sugar into a small - medium sized plate or dish
4. Mix eggs, vegetable oil, cake mix, and zest in a bowl until a uniform dough appears
5. Using a mini ice cream scoop, or small spoon (anything thats approx. 2 tbs) spoon out dough portions
6. For each dough ball, roll it evenly in powdered sugar
7. Place each dough ball on the baking sheet, evenly spaced
8. Bake for 7 - 9 minutes
9. Allow cookies to cool shortly on the baking sheet, before transfering to cooling rack
